Acai Bowl Recipe

Aloha Friends!
Today I get to share with you one of my favorite recipes/meals of all time! (Besides Poke) The Acai bowl! I first learned of acai bowls a few years ago when I went to my favorite smoothie place, Robeks. I have to admit, when I first had an acai bowl I was on the fence about it. It was different and it left traces of acai berries in my teeth. From then, I had not had an acai bowl until I seen an article in a Hawaiian surf magazine a few months ago. The article was an interview of a woman who goes by the name Earthy Andy. She began her own path to a holistic approach to healing. Now, I read this way before I realized my own dilemma. Funny how God works things far in the future for you to use later!
Anyways, in this article, Earthy Andy talked about acai bowls and their healing properties. She had a recipe & pictures of her acai bowls that looked so good, I could eat the magazine page! I decided to try her recipe & have not been able to put down acai bowls since. I have slightly modified her original recipe to suit my own needs. She will use granola but the AIP Paleo diet does not allow for oats or grains of any sort, so I just omit that. I also have added strawberries to my bowls. And great news, no traces of acai in my teeth. Talk about a win! I will include Earthy Andy's blog below along with health benefits of each fruit and the sources where I found the information.
Acai Bowl Recipe

Servings: 2 ppl or 1 large bowl
Ingredients
1 packet - Sambazon Frozen Acai Packet
2 prefrozen banana's (I suggest cutting up a few banana's and putting them in a freezer bag a few hours before - they will keep for up to a week.)
1 Papaya (Or coconut milk, almond milk, water, etc.)
5 strawberries, diced
1 kiwi, peeled & diced
1 banana, peeled & diced
1 mango, peeled & cubed.
1/4 cup blueberries
two pinches of coconut shavings (optional)
Equipment
Food blender
Cutting board
Large culinary knife
Large sized bowl
Directions:
In a food blender, add 1 packet of the Sambazon Acai Packet, 2 frozen banana's, 1 Papaya. (You can also use coconut milk, etc. You need a liquid base so if Papaya is too expensive, use whatever liquid base you prefer.) Blend until everything is mixed and smooth.
While your acai base is blending, prepare your fruit toppings.
Once the acai mixture is done, pour into your large sized bowl. If you are making this for two, then divide the mixture evenly between two medium sized bowls.
Place your toppings on top of the acai mixture and sprinkle two pinches of coconut shavings all over.
Eat and Enjoy immediately.
Notes:
* I have found it best to eat the acai bowl right away. If you store it in the refrigerator, it will become too soft and watery. I'm a texture person, so it isn't very appetizing after this point.
* You can find Sambazon Frozen Acai Packets in the freezer aisle of your local health store or at many Supermarkets. I picked mine up at Vons.
* Another twist is, if you are using granola, you can put it on the bottom of your bowl before you pour your acai mixture, as well as on top of your mixture. It just gives an overall crunch to the whole bowl.

Blueberries - Low fat, great source for Vitamin C - development of tissue & promotes wound healing, helps body process cholesterol & nutrients such as carbohydrates & proteins, & is a good source of dietary fibers.
Strawberries - Helps burn stored fat, Boost short term memory by 100% in 8 weeks according to the Journal of Agricultural & Food Chemistry, low in calories - high in fiber, eases inflammation, lowers cardiovascular disease, promotes bone health, helps prevent oesophageal cancer, anti-again properties, good for weight-loss & promotes eye health.
Coconut Shavings: Great source of protein & fiber - maintains healthy tissue & muscles as well as rebuilds cells. it aids in proper digestion & may lower heart disease, diabetes & certain types of cancer.
