Yummy Banana Walnut Bread

Hello Friends!

I had seen this yummy, scrumptious looking Banana Walnut Bread on a friends Facebook page and I just had to ask for the recipe. So when she messaged me with the recipe, I went out and bought all of the fixins! Flour…Check. Brown Sugar…Check. Banana’s…Check. The recipe called for over-ripe bananas SO… I left them out to the side where they wouldn’t get eaten and could be nice and ripe in a few days. Or so I thought. When you live in a house with seven other people, you quickly realize things do not always work out the way you expect. As you might have guessed, those bananas were eaten. It really was my fault. I didn’t put them far enough away from the rest of the fruit & vegetable basket.

So I went out and bought 2 more bunches of bananas. I placed one in the fruit & veggie bowl, and the other on the windowsill completely on the other side of the kitchen. I thought that should do it! It is obvious it is not near the eatable basket whatsoever! Again, I thought wrong! Not only were the bunches of bananas eaten in the basket, but they were eaten from the windowsill too! At this point, we all had a good laugh from it because it is just so us as a family to do stuff like this.

Back to the store I went with another 2 bunches of bananas but THIS time, I learned. Jason wrote all over the outside of one of the bunches, “Do Not Eat!” I guess I should have known but a note was all it took to salvage these bananas. So what seemed like an eternity of waiting to make this banana bread, you would think I would pounce on making it the second I had seen these bananas were ripe enough right? Wrong! I waited until the absolute last day before I couldn’t even use them to make this bread. This is so typically me - Procrastinator at its finest.

Eventually, I obviously was able to get this bread made and I am SO happy I did. It is absolutely delicious! It was such a huge hit in the house that more than half of it was gone by the time I woke up. Ravenous they are in this house! Lol. At least I was able to try some before it got devoured. After posting the picture of this, I had many of you asking for the recipe. I promise I was not ignoring you when you requested this. I was just waiting for a break in my schedule to quickly type this up and post it for you all to try and share. Really, we all have to thank Lauren for posting a picture of her making this bread because without her, this post would never happen and I would never be able to share this with you. I have to say, this is why I love this time of year. Hearty soups and tasty homemade breads – they are exactly what makes this time of year so treasured.

The moral of the story: Label your bananas if you want to make banana bread!

Ingredients:

2 Cups – All Purpose Flour

1 tsp. – Baking Soda

¼ tsp. – Salt

½ Cup – Butter

¾ Cup – Brown Sugar

2 Eggs, Beaten

2-1/3 Cup – Mashed, Over-ripe bananas

1 Cup – Walnuts, chopped

Directions:

  1. Preheat oven to 350 degrees. Lightly grease a 9” x 5” loaf pan.

  2. In a large bowl, combine flour, baking soda & salt.

  3. In a separate bowl, cream together the butter & brown sugar.

  4. Stir in eggs & mashed bananas until well blended.

  5. Add the chopped walnuts into the banana mixture until well blended.

  6. Stir banana mixture into the flour mixture; stir just to moisten and the flour mixture is well blended.

  7. Pour batter into prepared loaf pan. (Optional: Sprinkle some chopped walnuts on top of the batter so you have walnuts on top of your bread as well as inside.)

  8. Bake for 60 to 65 minutes, until toothpick inserted into center of loaf comes out clean. (I have to say here, Lauren said she would have put it in for 50 minutes rather than the whole 60. I put it in for the full 65 minutes because I have a really old oven from the 60s but if you have a newer oven, you may need to only put it in for 50 minutes like she suggested.)

  9. Let the bread cool in the pan for 10 minutes, then turn it out onto a wire rack.

  10. Enjoy!
