Watermelon-Cuke-Lime Beverage

Aloha!
If you have read any of my other articles, you will know I am addicted Dr. Pepper. It is a sickness, I know. Unfortunately, I can no longer drink Dr. Pepper and have had to suffer drinking just plain ol' water. One because I have not gotten creative enough to make yummy infused waters. Second, I have been trying to drink more water without adding anything to it so I could give my liver a break. You can imagine how boring it is to drink just water, all day, for every meal. Well, after 3 days of the water detox, I decided to scour the internet for a refreshing drink recipe that is also AIP friendly. When I found this one on Pinterest, I knew I had to try it. Watermelon & Cukes are two of my favorites. With the addition of lime, it gives it a tropical flair. I did alter the original recipe, omitting a lot of what was required for the recipe. I have no doubt it would taste way better but I am trying to limit the amount of honey & maple syrup I put into my body. For this reason, I kept this recipe to just 4 simple ingredients.

Servings: 4 - 6 in small glasses or 3-4 in large glasses
Ingredients:
1/2 Watermelon, cubed (leave 1 cup to the side)
1/2 Cucumber, peeled
1 Lime
Bottled Water
Equipment:
Cutting board
Culinary Knife
Peeler
Blender
Directions:
1.) Cube the watermelon so it fits in blender. Leave a cup to the side.
2.) Peel the entire cucumber. Cube half so it fits in the blender. Finely slice the
other half creating thin circles. Set the slices to the side.
3.) Place all of the ingredients into the blender. Cut the lime in half and
squeeze the juice into the blender.
4.) Pour 4-5 cups of water into the blender.
5.) Blend all of the ingredients until everything is blended evenly.
6.) Pour into a pitcher and place in fridge to chill.
7.) Once chilled, fill 1/4 of your glass with a few pieces of the cubed
watermelon & sliced cucumber pieces. Fill the rest of your glass with
the watermelon mixture.
8.) Enjoy!

Tips:
* The original recipe calls for honey, mint, Vital protein collagen peptides & club soda.
* This recipe leaves this mixture slightly pulpy. It doesn't bother me, but if you want something with less pulp, use a fine strainer to separate the pulp & the juice.
* When I make this next time, I will add the mint. I may even add sparkling water to the mixture after it has been blended, cutting the water used in the blender to 2 cups.
This recipe was very refreshing. If I wasn't on the AIP, I would consider mixing this drink Mojito style. Let me know how you like this recipe! Did you try the original version? How was it?
