Bacon-Guacamole Stuffed Chicken

Aloha!

As promised, I am providing you the King of King recipes I have tried since starting this blog. I found this recipe on Pinterest, of course! I did modify it to make it more AIP friendly and it was still da bomb! The guacamole on the inside kept the chicken juicy. The bacon wrapped on the outside gave it the flavor and crunch it needed. It is a melding of so many perfect elements, it makes your taste buds dance. So without further adieu, this fantastic recipe:

Serves: 6

Ingredients - (For Chicken)

6 Boneless, Skinless Chicken breast

1 Pack of Bacon (Thin cut) - Make sure there are at least 12 slices in the pack.

2 avocados

1 Yellow onion, diced

3 Limes, cut in half

Pink Himalayan Sea Salt

(Optional: 1 tomato, black pepper - not AIP friendly)

Ingredients - (For Side)

3 Carrots, cut into chunks

2 Sweet Potato, cut into chunks

5 Cloves Garlic, diced (Set 2 aside)

1/4 yellow onion (You can use the onion for the chicken)

Pink Himalayan Sea Salt

Olive Oil

Dried Oregano

Fresh Rosemary

Dried or Fresh Thyme

Equipment

Meat Mallet

Cutting Board

Culinary Knife

A bag (for chicken)

2 oven trays (glass or metal)

Pan w/ lid

Extra Pan, Skillet or BBQ

(Charcoal if using bbq)

Directions - (Preparations)

1.) Preheat oven to 400 degrees.

2.) Prepare all ingredients

a.) Peel & cut into large chunks - carrots & sweet potato (set aside)

b.) Dice onion & garlic (set aside) (Set aside 1/2 of the diced onion for the

guacamole.)

3.) Prepare Guacamole

a.) Scoop avocado into a medium sized bowl.

b.) Mix the 1/2 diced onion, juice of one lime, 2 cloves garlic (diced), & 2

tsp. of Himalayan salt. (Optional: add tomato & pepper if not following

AIP.)

c.) Set to side.

4.) Prepare Chicken

a.) Butterfly chicken

b.) Place opened butterflied chicken into a bag & thin out with a meat

mallet.

c.) Open the thinned chicken and season with salt & lime juice.

d.) Add Guacamole mixture.

f.) Close & wrap the chicken with 2 slices of bacon.

g.) Once all chicken is wrapped, place into oven for 20-25 min.

h.) Once chicken is done, sear the bacon on both sides using a pan, skillet

or bbq until bacon has a crisp to it - about 2 min each side.

5.) Prepare side

a.) Heat 1 Tbs. Olive Oil in a pan.

b.) Add in Carrots & Sweet Potato

c.) Season with Himalayan Salt, Oregano, Rosemary, & Thyme.

d.) Cook on medium-low heat with lid on, stirring occasionally - about 20

min.

e.) When Carrots & Sweet Potato are 3/4 of the way done, add garlic &

onions.

f.) Carrots & Sweet Potato side is done when you can stick a fork easily

through them - Don't cook past that or they will become mush.

6.) Serve & Enjoy!
